What is matcha and where does it come from?
This Japanese green tea is made from fresh, young Tencha tea leaves. They are picked by hand at the beginning of May (only one harvest per year). From 14 to 28 days before harvesting, the tea bushes are 90% covered (eclipsed) by tarpaulins. In the shade the leaves make extra chlorophyll and amino acids. The Tencha tea leaves are ground by traditional granite mills to an ultrafine emerald green powder. This powder contains no stems or veins but consists solely of 'leaf meat'. Many people find the pure taste not that pleasant which is why it is often combined with other ingredients to create lattes, ice cream, cookies, yoghurt or shakes. But nothing better than these vegan capsules where do you not taste the specific umami taste.
The spring picking of the tencha is done by hand. Hand-picked tencha, however is a rarity. That's why this matcha is so special. This plantation is also picked only once a year. In summer, the plantations are still trimmed, so that they do not proliferate, but then grow quietly until the next spring pick.
From a volcanic subsoil, where it is ideal for cultivation. The air and water are extremely pure and the rich volcanic surface (shirasu), in combination with the heavy fog that covers the fields, ensure that the leaves do not freeze in winter, but also that the sunlight is filtered naturally. Photosynthesis does its job very nicely, resulting in a creamy soft umami taste that characterizes matcha. The tea farmer specializes in tea. He knows his plantations and follows the rhythm of nature, looks at the change of the weather, how his soil is in order to deliver the best quality.
Uji is known as Matcha Paradise with their traditional working method, Pieter (owner Cafe Couture) traveled to his permanent matcha farm in Uji, Japan in June 2018 to see with his own eyes what such a production process actually looks like. 'It is impossible to express in words how special it is to be able to walk around there, how everything is explained in detail and with how much depth and care they guide the matcha process with love and passion for their profession. If you consider that 50 grams of matcha is ground per hour'. - says Pieter.

How to... make the best Premium Matcha?
Use fresh, most preferably soft water, 70°C.
Put 2 gram Matcha (2 bamboo scoops or ½ teaspoon) in a bowl and pour the water (70°C) onto the teapowder, and with a Matcha whisk (available here) beat until foaming. Whisk for about 15 to 30 seconds. Swallow it in one go.
Where to... keep your Premium Matcha?
After opening the package, keep the matcha in a dark and cool place. The refrigerator is certainly suitable for this.
