What's so unique... about this Ceremonial Silver Matcha? This substrate is and composed of mechanically picked Tencha from Kyoto and Kagoshima. The blend uses the Okumidori cultivar as well as the Samidori cultivar. By blending these two cultivars, we can obtain rich and deliciously complex aromas. Just as the leaves for our Ceremonial Gold, the tea leaves are shaded with 2 layers for 30 days to block sunlight. As a result, this tea reveals velvety mouthfeel with round and mellow flavor. What is Ceremonial Silver Matcha and where does it come from?
This is the very best quality matcha you can find, beside our Ceremonial Gold Matcha. This ceremonial quality is used in ceremonies and Buddhist temples.
Preparing matcha is an ancient Japanese tradition. Zen boeddhists from Japan encountered matcha during their travels through China. After that the Buddhists developed their own traditions and production methods.
The spring picking of the tencha is done by hand. Hand-picked tencha, however is a rarity. That's why this matcha is so special. This plantation is also picked only once a year. In summer, the plantations are still trimmed, so that they do not proliferate, but then grow quietly until the next spring pick.
It is a single-estate matcha, which means that the leaves are used to make this matcha, all come from the same plantation. So they are not mixed with cheaper inferior leaves. Only the first picking tencha is used. From 14 to 28 days before harvesting, the tea bushes are 90% covered (eclipsed) by tarpaulins. In the shade the leaves make extra chlorophyll and amino acids. The Tencha tea leaves are ground by traditional granite mills to an ultrafine emerald green powder. This powder contains no stems or veins but consists solely of 'leaf meat'.

How to... make the best Ceremonial Silver Matcha?
Use fresh, most preferably soft water, 70°C.
Put 2 gram Matcha (2 bamboo scoops or ½ teaspoon) in a bowl and pour the water (70°C) onto the teapowder, and with a Matcha whisk (available here) beat until foaming. Whisk for about 15 to 30 seconds. Swallow it in one go.
Where to... keep your Ceremonial Silver Matcha?
After opening the package, keep the matcha in a dark and cool place. The refrigerator is certainly suitable for this.
